  • 1 onion, peeled and quartered
  • 2 cloves garlic, peeled
  • 1 leek, white part only washed and trimmed
  • 2 sticks celery, roughly chopped
  • 1 carrot, roughly chopped
  • 280 grams of zucchini, roughly chopped
  • 1 medium potato, roughly chopped
  • 1 heaped tablespoon of veg/chicken stock
  • 850 grams of water
  • 1 level teaspoon of dried dill
  • pepper to taste
  • 80 grams of cream or top with yogurt
  • parsley to garnish

Recipe's preparation

  1.  Add onion and garlic to bowl chop 5 seconds speed 5

    Place the rest of ingedients into the bowl and cook 25 minutes 100deg speed one

    Blend slowly for 30 seconds up to speed 8 -- if you like a smoother soup repeat

    If you would like the cream mixed into the soup add the 80grams and blend 15 seconds speed 1

    I like to omit the cream and add a spoonful of greek yogurt on serving

     

Tip

serve with crusty bread or delicious home made herb scones

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
