Ingredients

  • 75 g quinoa
  • 1 Onion halved
  • 1 shallot/spring onion
  • 300 g rroughly chopped sweet potato
  • handful mint and/parsley
  • 250 g holloumi roughly broken up
  • 2 eggs
  • 20g plus oil, for frying

Recipe's preparation

  1. Place quinoa in bowl and grind to flour, 10sec sp 10, remove from bowl and place aside (don't clean out bowl)

  2. Place onion, shallot and any additional herbs in bowl and chop 3 sec sp7

  3. Saute these with the 20g oil for 2min, varoma, sp1

  4. Add sweet potato and chop 5 sec sp8

    Then add halloumi and cop 3 sec sp5

  5. Lastly add eggs plus quino flour from first step and mix Counter-clockwise operation"Counter-clockwise operation" 30sec sp3

  6. Heat up a frypan with a little oil over a medium heat and fry off a tablespoon at a time. Serve warm with natural yogurt mixed with come lemon through.

Tip

Can also be served cold and great in lunchboxes.

    I really liked these, they were super yummy, and very child friendly... The only problem, was they didn't like to stay together in the fry pan, maybe adding a little chia would help them glue together a bit more.
