Spinach, Bacon and Cheese Sausage Rolls
- 50 g Parmesan cheese, cut into 2cm cubes
- 100 g feta cheese
- 80 g grated cheese
- 100 g Diced bacon
- 100 g Baby Spinach Leaves
- 1 heaped tbsp marjoram leaves
- 1 onion, quartered
- 1 egg
- Salt and pepper
- 2-3 sheets Puff pastry, lightly thawed
- 1 lighty beaten egg to brush pastry with
- sesame seeds - optional

- Line a baking tray with baking paper and preset oven to 210°C
- Place Parmesan into Thermomix bowl and mix for 10 secs / speed 9. Remove from bowl and set aside
- Place onion in bowl and dice for 4 secs / speed 5. Scrape down sides and dice for a further 2 secs / speed 5. Scrape down sides of bowl again
- Add the Parmesan, feta, grated cheese, bacon, spinach, marjoram, egg, salt and pepper to Thermomix bowl. Mix for 15 secs / speed 4 or until all ingredients are combined
- Place partially thawed pastry sheets on bench and cut in half lengthways. Add an approximately 3cm wide line of mixture down the centre of the pastry. Brush one edge with egg. Roll the pastry, starting from the edge without the egg, to the centre of the spinach mix, then roll the egged side on top
- Cut the rolls into 3 and place seam side down onto baking trays. Brush each sausage roll with more egg and sprinkle with sesame seeds if desired
- Place into oven and bake for 25 mins or until golden brown

About to make these for a second time. Very tasty! I didn't use pastry, just cooked them in a muffin pan instead. Delish!
When I make this I use the feta cheese you buy cut in blocks from the deli rather then the feta you buy already in the olive oil. This is perhaps why it was runny and leaked out
I found the mixture to be runny and therefore a bit hard to roll. Nevertheless these were yummy and I certainly would make again. I did find with the bacon, feta and cheese that it was rather salty. Used dried marjoram as couldn't buy fresh.
Delicious..!
The filling leaked out a lot during baking but if you tap it back in slightly ( with a knife) they firm up well.
