Ingredients

Zucchini Spice Muffins

  • 210 grams medium zucchini, sliced into 5mm rounds
  • 2 whole eggs
  • 125 g olive oil
  • 60 grams milk or soy milk
  • 1 tsp vanilla
  • 210 plain flour
  • 1 heaped teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 60 g Walnuts or Pecans
  • 125 g brown sugar or rapadura

Recipe's preparation

    Zucchini Spice Muffins
  1. place zucchini in TM bowland chop for 4 secs on speed 5

    add  eggs, brown sugar, oil, milk, vanilla and combine for 3 secs on speed 3

    add all other ingredients and combine 4 secs on speed 4 

    spoon in to muffins trays, decorate top of each wqith a walnut or pecan half.   Bake at 200deg C for 20 mins . 

    Remove from pan and cool on rack

Tip

use silicone muffins holders 

these freeze well and are good for lunches.

serve with Cream Cheese spread - mix equal quantities butter and cream cheese, whip on speed 4 til light and fluffy.

    so glad you liked them . I have a great muffin book... sooo old and all the recipes so easy to convert. I have not tried any other recipes but hey give it a go   tmrc_emoticons.)  carrots would be nice I think or cooked pumpkin...

    I am so bad at making muffins but at last there is a recipe that worked! So delicious and my girls loved them. I used coconut sugar as I had run out of brown sugar and baked them in a greased muffin tin with no liners. They had a lovely, slighlty crisp outside and so soft inside.     Thanks for a lovely recipe, my neighbour was giving away zucchini so I made some muffins, just lovely, I also used the receipe in  my local show for muffins and won best in show!  tmrc_emoticons.)

    These were super easy and quick and turned out really tasty. Great use of our excess zucchini from the garden and as others said, the kids didn't notice the green veg in there! Very tasty!

    Will definitely make again, but will double next time.

    I made these today with yellow zucchini ( I have heaps growing at the minute!) but left out the nuts and added some sultanas. Very yummy and mildly spiced. The kids dont even realise theres zucchini in it!
