Ingredients
- 30 grams olive oil
- 1 stem of lemon grass, white part only and roughly chopped
- 2 cloves of garlic, peeled
- 1 onion, peeled and quartered
- 1 cm of fresh ginger
- 1-2 level tablespoons of Babas meat curry powder, depending on your heat taste
- 350 grams of sweet potato, peeled and coarslely chopped
- 1 carrot, coarsley chopped
- 1 heaped tablespoon of chicken or vegetable stock
- 1 400 can of coconut milk/cream
- 3 dried bay leaves
- 600-700 grams of chicken thighs/breast, cut into medium cubes
- 2 level teaspoons of brown sugar
- 2 level teaspoons of fish sauce
- fresh corriander leaves for garnish

Add onion, garlic, lemon grass, chop 7 seconds speed 5, scrape down bowl and repeat
Add oil cook 2 minutes 100 deg, speed 1
Add curry, sweet potato, carrot, stock, coconut milk, bay leaves and cook 15 minutes 100 deg, reverse, speed soft spoon
Add cubed chicken, fish sauce, brown sugar, cook 10 minutes 100 deg, reverse, spoon soft, MC off basket on top
Serve with corriander leaves as garnish - omit if you do not like corriander
Tip
As we like a warm curry I use 2 table spoons of Baba meat curry powder - reduce to one if you like a milder taste - curry powder can be replaced with Clives or Keens curry powder
Serve with thick chunky piecs of Vietnamese baguette style rolls to soak up the juices, or serve with rice
