Ingredients
Creamy Bacon and Capsicum Pasta
- 3 spring onions, roughly chopped
- 1 clove garlic
- 4 stems of parsley
- 20 grams Olive Oil.
- 8 slices bacon, diced
- 100 grams white wine
- 250 grams water
- 100 grams sour cream
- 1/2 Capsicum, diced
- 40 grams TM vegetable stock
- 40 grams tomato paste
- 250 grams dried pasta of your choice

Add spring onion, garlic and parsley to TM Bowl. Chop 3 secs / Speed 7. Scrap down sides.
Add olive oil and saute for 2 mins / 100 degrees / Speed 1 with MC off.
Add bacon and saute for 3 mins / 100 degrees / / Speed 1 with MC off.
Add all remaining ingredients (besides the pasta) and cook for 10 mins / 100 degrees / / Speed with MC on.
Add pasta and cook for 7 mins (or more depending on cooking time of the pasta) / 100 degrees / / Speed .
Depending on the pasta, a MC full of water might need to be added at 7 mins to complete cooking for another couple of minutes.

Tip
Mix up the ingredients, you can use chicken, sundried tomatoes, mushrooms.
The sauce is like a stroganoff flavour.
I use gluten free penne or spaghetti, but mix it up with what ever you have!

Delicious but I halved the stock, I think 40 grams would have been too salty
We enjoyed this, including my super fussy 4 year old. I didn’t have bacon, so diced up two chicken thigh fillets, and put in cream and lemon juice to make sour cream. I didn’t find it too salty at all. Maybe because there was no bacon. I think next time I’ll do a bit more sauce ingredients as mine looked a little drier than the picture. I’ll definitely be making it again.
Enjoyed it and we had no problem with the salt taste in ours. Small servings though as it only fed 2- 3 adults here but was well enjoyed
Should have read comments first. Found this waaaay too salty! However i imagine that if the stock was to be halved, it would probably be very nice.
Loved this - thank you! I made it with salami instead of bacon, used a whole red capsicum, ricotta instead of sour cream, added baby spinach when I added the pasta. I did it with beef ravioli and was perfect. I didn't find it too salty, but I generally halve the salt in my veg stock as I don't need it to preserve as I use it so fast! Will definitely be making again with different pastas etc. A great easy tasty family meal.
Just made this tonight and even the child who runs a mile from pasta had some! Used bow tie pasta (farfalle) and added 2 measure cups of extra water as the pasta had a cook time of 12 minutes. Agree it was salty and will try less vege concentrate next time.
Used natural yoghurt instead of sour cream and onion instead of spring onion. Used macaroni and it was really nice
Yes definitely less stock, salt was overpowering. Otherwise very nice
Very nice!! I added some zucchini and used normal onion instead and it was lovely and easy.....
