Pumpkin, Spinach & Feta triangles
- 500 g pumpkin, peeled and cut into 1.5cm cubes
- 2 tbsp olive oil
- 1 pinch Salt & Pepper
- 1 brown onion, quartered
- 2 cloves garlic
- 250 g Frozen spinach
- 200 g Bio cheese vegan feta, crumbled
- 1 tsp dried thyme
- 3 - 6 sheets frozen puff pastry, thawed, double check ingredients, not all brands are vegan
- Plant based milk, To use as a wash
- 1 tbsp sesame seeds

- Preheat oven to 200C
- Place cubed pumpkin into a separate bowl, coat with olive oil and season with salt and pepper. Spread in a single layer on a baking tray and bake for 20 minutes.
- "Closed lid" Place frozen spinach in Thermomix bowl. Cook for 6min/100C/sp2. Transfer cooked spinach into sifter and use a spatula to push the spinach against the side to remove as much liquid as possible. Set aside.
- In Thermomix bowl, place onion and garlic. Chop 3sec/sp5. Cook for 5min/Varoma/sp1 with the MC off.
- Cut each pastry sheet into squares (depending on how big you would like the triangles) then place a small amount of mixture in the centre, brush edges with milk, fold over to make a triangle and seal. Be sure not to over fill. For example, if I'm making appetizer size triangles, I cut 16 squares out of one piece of pastry, then use 1/2 teaspoon of mixture per square.
- "Closed lid" Transfer to a tray lined with baking paper. Brush with milk and sprinkle with sesame seeds.
- "Gentle stir setting" "Closed lid" Bake for 20 min until puffed and golden.
Tip
To freeze, wait until the triangles have completely cooled and place in ziplock freezer bags or airtight containers.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
