Ingredients
- 20 g olive oil
- 1 onion
- 1 garlic clove
- 2 Chicken breasts
- 200 g Tasty cheese
- 1 carrot
- 1 zucchini
- 4 mushrooms
- 2 eggs
- 100 g bread crumbs
- 2 tbsp KFC seasoning, (see notes for link to recipe, this is not essential however)
- 100 g bread crumbs, For coating nuggets

- Spray 2 flat Oven trays with oil. Turn on Oven to 200 Degrees.
Place Cheese, Carrot, Zucchini, Mushrooms and chop for 10 seconds, Speed 5. (Chop for a couple more seconds if you wish to make the veg smaller and less noticeable to the little ones!)
Set aside in a bowl.
Place Onion, Garlic and oil into Thermo bowl and chop on Speed 7, 3 Seconds.
Sautee for 2 Mins/120 degrees/Speed 2. Tip out onto to the chopped Vegetables that you have already set aside.
Leave bowl to cool slightly then add chicken pices and Turbo for 3 seconds or untill an eaven consistancy.
Add all remaining ingredients (onion, garlic, vegetables, eggs and breadcrumbs) back into the bowl with the chicken and season to taste, Mix for 20 seconds on speed 3.
In a small bowl mix 100g of bread crumbs with 2 tablespoons of KFC seasoning.
With a icecream scoop (or a soup spoon) scoop nugget sized portions straight into a bowl of bread crumbs, coat and shape into desired shape, then place onto prepared trays. Spray a little oil over each nugget. (I used coconut oil but any is fine)
Bake for 20 minuets, turning over half way through.

I use a stanless steel Ice Cream Scoop sprayed with oil to scoop the mixure as i find it a lot less messy and quicker.
For a gluten free option, omit the bread crumbs and crumb in GF corn flakes.

Yummo! Made these tonight and my kids loved them! I didn't have zucchini or breadcrumbs so i swapped for baby spinach and used quinoa flakes for the mixture and GF cornflake crumbs for the crumbing. Gluten free and delicious! Will definitely be making these again!
Made these and they were a hit with my fussey 4 yo. Omitted the mushrooms and used Panko bread crumbs to coat as per previous comments, will def make again. Thank you
I used a red capsicum instead of zucchini. I also pan fried in olive oil before baking. My girls loved them.
Delicious. Toddler loved them and i was happy there was so many hidden veggies being eaten. Will definitely be making again.
