  • 2 zucchini, medium, roughly chopped
  • 1 carrot, roughly chopped
  • 1 baby spinach, handful
  • 15 grams olive oil
  • 1/2 brown onion, roughly chopped
  • 1 clove garlic
  • 1 handful diced bacon
  • 125 grams grated cheese, tasty or cheddar
  • 100 grams self-raising flour
  • 4 eggs

Recipe's preparation

    Preparation
  1. 1. Preheat oven to 180 deg

    2. Add zucchini, carrots and spinach to TM bowl and chop 3 seconds/speed 5. Scrape sides and repeat (if needed) until vegies are chopped to a smallish size. Set aside.

    3. Add olive oil, onion and garlic and chop 3 seconds/speed 7

    4. Add bacon and saute - Counter-clockwise operation"Counter-clockwise operation" Varoma, 5 minutes/speed 1

    5. Add chopped vegies, cheese, flour and eggs and mix - Counter-clockwise operation"Counter-clockwise operation" 10 seconds/speed 4. Scrape sides and repeat (if needed) until mixture is well combined

    6. Pour into prepared muffin trays and bake for 15-20 mins until golden brown

    ** Note: Muffins will be squishy and soft when super hot, however firm up beautifully when cooled.

    FREEZES WELL

     

Tip

Great hidden veggie lunch box recipe. Be mindful not to over-chop in step 2. It doesnt taste as nice in my families' opinion when chopped too finely.

Can be made as a slice too, just pour into rectangle pan.

Use Gluten free S/R flour if you prefer.

    Absolutely rate these!!! I didn't have carrots but used some left over mushrooms and shallots I had in the fridge. I added more flour as the zucchinis were huge and also squeezed all the water out of the vege mix before adding to the rest of the mix. Will be making these again!

    My boys 10 and 6 love these muffins so great when they are so healthy! Only thing is they were extremely wet. First tried to overcome by adding more flour but then found a muslin bag in my cupboard and drained the veg after chopping (drank the juice that resulted). Made much firmer tmrc_emoticons.D thanks for this recipe so glad my boys love them  Love

    THERMagic - I'm sorry to hear that. In the past, I've had the same problem when my

    oven has been too hot. I would try reducing the temp by 20-30 degrees.  This will give it the chance to cook and bond better from the inside out. If that fails, a little more flour or a little less oil should do the trick. Good luck!

    This sounded yum but it did not turn out at all and I only used one zucchini. Cooked on the outside but the inside remained soggy tmrc_emoticons.(
