Ingredients
Milk loaf
- 350 g Milk
- 50 g Butter, chopped
- 1 tsp sugar
- 2 tsp dried instant yeast
- 650 g bread / baker's flour
- 2 tsp bread improver
- 1 tsp brewing sugar, optional
- 1 egg, lightly beaten
- 2 tablespoons oil
- 1.5 tsp salt

- Grease a large loaf tin.
1. Combine the milk, butter and sugar 37°C/2 mins/sp2.
2. Add the remaining ingredients in the order listed.
3. Bring the speed slowly to sp7 and blend briefly 20 secs.
4. Knead "Dough mode" 5 mins. Add a little water to moisten if the mixture seems dry.
5. Tip onto a greased mat, covered bowl and rest/prove for 30 mins.
6. Punch down and shape as desired.
7. Cover again and leave to rise for a further 30 mins or until it reaches the top of the loaf tin, or is double in size.
Preheat the oven to 190°C.
8. Bake for 25 mins or until cooked when tested.
