Ingredients
Enchiladas
- 2 cloves garlic
- 1 Red Chilli - or to taste
- 1 onion
- 2 cans diced tomatoes
- 500g Chicken Breast - sliced
- 10 Tortilla wraps
- 150g Cheddar cheese
- 2 Avocadoes
- 1 teaspoon cumin seeds
- Sour Cream (optional)

Preheat oven to 200 degrees.
2. Place cheese into mixing bowl and grate 6 sec/speed 8. Set aside.
3. Place chilli, garlic and cumin seeds into mixing bowl and chop 7 sec/speed 9.
4. Add the onion and chop 4 sec/speed 7.
5. Add the tins of tomatoes.
6. Place chicken breast into the Varoma dish and place on top of lid.
7. Cook 25 min/Varoma (or until the chicken is cooked).
8. Take out the chicken and slice thinly.
9. Pour half of the tomato sauce into the oven dish.
10. Put half your cheese and the chicken into a bowl and mix together. To prepare the enchiladas - take a tortilla and spread some of the cheese/chicken mixture on with some avocado. Wrap up the tortilla and lay in the dish on top of the sauce. Continue wrapping each tortilla and filling the dish.
11. Pour the rest of the tomato sauce over the top and sprinkle with the remaining cheese.
12. Cook in the oven for about 12 mins to melt the cheese and crisp it all up.
13. Serve with salad and sour cream !!!

These were delicious, thanks for a great recipe. Might experiment a bit next time, possibly shredded beef or pork.
Yum! Needed a few minutes under the grill to crisp the cheese up. I added a few extra chillies because I’m slightly crazy and I shredded the chicken rather than slice. The tortilla was a bit soggy, I think I had too much sauce under it. The flavour was great! Toddler ate it, so next time this mummabear is going to sneak veggies in with the chicken! Muhahahaha.
Love this! Have been making a similar version for years using thermo in parts never thought to combine the chicken and sauce part! I used 2x chilli and shredded the chicken speed 7 "Counter-clockwise operation" 4 seconds then in a bowl mixed with chicken sour cream and cheese, delish!
