Ingredients

  • 2 centimetre ginger
  • 2 red chilli
  • 1 stalk lemongrass
  • 3 cloves garlic
  • 1 onion, halved
  • 2 tsp cumin
  • 1 tsp coriander
  • 1 tsp tumeric powder
  • 2 tbsp tomato paste
  • 2 carrots, sliced
  • 1/2 Large Sweet Potato, chopped
  • 3 tbsp tomato relish
  • 600 g filtered water
  • 400 g coconut milk
  • 500 g Beef diced
  • salt and pepper to taste
  • 10 g coconut oil

Recipe's preparation

  1. 1. Place ginger, chillis, lemongrass, garlic and onoins in mixing bowl and chop 3 sec/Speed 7

    2.  Add cumin, coriander, tumeric, tomato paste cononut oil and saute 3 mins/100/speed 1

    3. Add water, coconut milk, carrot, sweet potato, tomato relish, and salt and pepper and cook 10 mins/100/ Counter-clockwise operation"Counter-clockwise operation" speed low

    4. Add beef and cook for 15 mins/100/Counter-clockwise operation"Counter-clockwise operation" speed low

    5. Enjoy with your choice of greens, rice or cauli rice.

Tip

My tomato relish is very salty so you may need to add a little more salt or a spoon of stock.
