Ingredients
- 2 centimetre ginger
- 2 red chilli
- 1 stalk lemongrass
- 3 cloves garlic
- 1 onion, halved
- 2 tsp cumin
- 1 tsp coriander
- 1 tsp tumeric powder
- 2 tbsp tomato paste
- 2 carrots, sliced
- 1/2 Large Sweet Potato, chopped
- 3 tbsp tomato relish
- 600 g filtered water
- 400 g coconut milk
- 500 g Beef diced
- salt and pepper to taste
- 10 g coconut oil

1. Place ginger, chillis, lemongrass, garlic and onoins in mixing bowl and chop 3 sec/Speed 7
2. Add cumin, coriander, tumeric, tomato paste cononut oil and saute 3 mins/100/speed 1
3. Add water, coconut milk, carrot, sweet potato, tomato relish, and salt and pepper and cook 10 mins/100/ "Counter-clockwise operation" speed low
4. Add beef and cook for 15 mins/100/"Counter-clockwise operation" speed low
5. Enjoy with your choice of greens, rice or cauli rice.
Tip
My tomato relish is very salty so you may need to add a little more salt or a spoon of stock.
