Ingredients
Chicken tagine with quinoa
- 600 grams of chicken thighs, sliced in to 2cm cubes
- 25 grams olive oil
- 2 cloves of garlic peeled
- 1 onion, peeled and quarterd
- 4 cm piece of ginger, roughly sliced
- 1 level teaspoon of ground cumin
- 1 level teaspoon of ground coriander
- 1/2 level teaspoon of cinnamon
- 250 grams of sweet potato, diced into approx 2cm cubes
- 1 Medium Carrot, diced into 1cm cubes
- 150 grams of sliced green beens
- 460 grams of water (2 1/2 cups)
- 1 heaped tablespoon of veg/chicken stock
- 2 table spoons of corn flour, mixed with a little water to a thin paste
- 1/2 cup of fresh corriander or parley
- 1 cup of quinoa - I used tri colour

- Add garlic, onion and ginger to bowl - chop 6 seconds, speed 5 - scrape down bowl
Add oil and cook 3 minutes, 100 deg, speed 1 MC off
Add spices, cook 100 deg, speed 1 MC off
Add water, stock, sweet potato, carrot and cook 15mins 100 deg, reverse, speed spoon MC off basket on top
Add chicken and beans cook 12 minutes, 100 deg, reverse, spoon MC off Basket on top
Drizzle cornflour mix around the bowl mixing softly with a spatula, cook 2 mins, 100 deg, reverse, spoon MC off basketon top
Transfer to thermoserver to keep warm
Without washing the bowl add 380grams of water and one cup of quinoa and cook 15 mins, 100 deg, reverse, spoon MC off
Serve Quinoa to the side of the bowls add the chicken and top with corriander/parsley

Made this for dinner tonight and it was delicious! I added extra sweet potato and used snow peas as didn't have beans
Here I am doing 5 stars again. I've never eaten Quinoa before and am so glad I have now. The nutty flavour and the texture of the Tagine go so well together. Another top keeper!
