Ingredients
Creamy Chicken, Pasta & Asparagus Casserole
- 150 g Tasty cheese, cubed
- 250 g Fettucine
- 1 clove garlic
- 1 onion, halved
- 2 sticks Celery, sliced
- 1 red capsicum, diced
- 40 g olive oil
- 440 g tinned asparagus spears
- 500 g chicken breast, cut into 2 cm cubes
- 300 g water/juice from tinned asparagus
- 30 g vegetable or chicken stock concentrate
- 1/2 teaspoon Oregano
- 300 g sour cream

Grate tasty cheese for 4 seconds on speed 8. Set aside.
2. Cook fettuccine according to instructions in EDC p. 16, rinse using Varoma then set aside to drain while you start making remainder of casserole.
3. Place onion and garlic in TM bowl then chop for 3 seconds on speed 7. Add oil then sauté for 3 minutes at 100oon reverse speed soft.
4. Add celery, capsicum, chicken, asparagus juice/water and stock and cook for 5 minutes at 100oon reverse speed soft. Add asparagus spears, oregano, sour cream and cook for further 7 minutes at 100oon reverse speed soft.
5. Spoon half the chicken mixture over the base of a greased casserole dish, top with pasta then remaining chicken mixture. Sprinkle with cheese then bake in a moderate oven for about 45 minutes at 180o or until cheese is lightly browned.

Tip
TIP: No reason you can’t change up some of your veggies – i.e. you could add some mushrooms, spinach, broccoli, squash etc.

Great recipe. We all enjoyed it. Made exactly to recipe and it came out perfectly.
Great flavour, but did not like the ragged chicken. Cherryn says she had heaps of liquid - I had none. None at all. It must have absorbed into the pasta? I used fresh asparagus and added a cup of water. I'm sure there would be no more than that in a tin.

I tried it with guilt free noodles (made from Konjac), which didn’t really set. (If I had thought the idea all the way through, I would have realised this lol)
Regardless of my culinary misjudgements, the casserole was really tasty.

This was a delicious meal. I used some spagetti, broken cannaloni and risoni as this is all I had and once layered in the casserole this was fine. I didnt have asparegus but used spinich, mushrooms, a can of sweetcorn and a couple of carrots. I used plain yougurt instead of sour cream and followed the rest of the recipe accordingly as well as 300ml of water and it came out the oven perfect. It made loads and will definately be a favourite.
Very tasty. The family loved it. It makes a lot of liquid though. I chucked a lot of the liquid out before putting it in the oven. Next time I'll use penne pasta instead of fettuccini. Thanks!
East to make and a winner with my 2yr old. I was lazy and chopped the celery and capsi with the onion and sauted them all together! Whole family enjoyed it and lots of left overs.

Also didn't have enough sour cream, so added some natural yoghurt.
So easy and I didn't have any of the veggies that you said. I used broccoli, mushrooms and zucchini. Still beautiful !
