- The spice paste has the following items
- 1 onion, peeled and quarterd
- 2 clove garlic, peeled
- 1/4 cup of roasted peanuts
- 2 cm piece of ginger, roughly chopped
- 1 long red chilli, roughly chopped
- 2 level teaspoons of ground corriander
- 1 level teaspoon ground cumin
- 1 level teaspoon of ground Fennel
- 1 level teaspoon of ground tumeric
- 1 level teaspoon of ground cinnamon
- 1 level teaspoon of ground cardamon
- 1/2 level teaspoon ground cloves
- 1/2 level teaspoon ground black pepper
- Main Ingredients
- 30 grams of olive/peanut oil
- 700 grams of chicken thigh fillets, diced into 3-4cm pieces
- 2 large ripe tomatoes, diced
- 1 level tablespoon of chicken/vegetable stock paste
- 1 400 gram tin of coconut cream
- 1 level tablespoon of lime juice

- Add onion, garlic, peanuts, chilli and ginger to bowl, chop 5 seconds speed 5
Add all the spices mix 5 seconds, speed 5
Add oil and cook 2 minutes, 80 degrees, spoon
Add chicken and mix 2 minutes, reverse, soft
Add veg/chicken stock, chopped tomatoes, and coconut cream, cook 15 minutes, 100 degrees, reverse, spoon MC off - basket on top
Stir through lime juice and rest in thermoserver to blend flavours for a few minutes
Tip
Balanise cusine is in the flavour of the sauce, fennel, ginger, and peanuts
Omitt peanuts if allergies and sub for almonds
I left the skins on the tomatoes but you can pop it a bowl of boiling water and the skins will slip off when rubbed
Serve with steamed rice and asian greens
