Ingredients

Corn Pattie

  • 1 sweet potato quartered
  • 1 zucchini quartered
  • 1 white onion quartered
  • 1/2 bunch of coriander stems
  • 1 garlic
  • 1 corn kernel, cut off cob
  • 1 Can of Cannellini Beans, drained and rinsed
  • 1 teaspoons cumin ground
  • 1 egg
  • 50 g spelt flour

  1. 1. Place sweet potato and zucchini into bowlClosed lid"Closed lid" . Chop

    5sec/speed 5. Set aside. No need to rince bowl. 

     

    2. Place onion, garlic and coriander stems into bowlClosed lid"Closed lid" Chop 

    3 sec/speed 5

     

    3. Add oil to bowl Closed lid"Closed lid"  and saute for 

    3min/varoma

     

    4. Place reserved grated sweet potatoes and zucchini , cumin and corn into bowlClosed lid"Closed lid" . Cook

    5min/varoma.

     

    5. Place beans, egg and flour and mix 

    5sec/speed 3. Add more flour if needed. You want a slighlty sticky mixture.

     

    6. Add salt and pepper to taste. 

     

    7. With wet hands make 12 patties.

     

    8. Heat oil in pan and gently fry patties until golden brown on both sides. Drain on paper towel. 

     

     

     

Tip

These are great served warm with avocado salsa. 

You could make these gluten free by using brown rice flour or chickpea flour instead of spelt flour.  

Leave the egg out and make them vegan.

    The mix was really yummy but I couldnt make them into burger patties. After a few attempts I put some SRF in and made them into savoury muffins. There needs to be exact amounts detailed in the recipe for things like sweet potato, zucchini and oil.

    Healthy Fresh Tasting

    Changes for 2 with what had in the house - 1/2 qty, white of spring onion, red kidney beans, breadcrumbs & plain flour to dry up a bit, extra coriander & celery leaves prior to pan cooking.

    Served with salad leaves and guacamole and was very yummy. Tasted fresh, not too strong in any one flavour, might add extra garlic next time.

    Questions: As a newbie, would be good to know:

    1- How much oil to add when sauteing garlic and onion.

    2- Whether to add any stir speed in Saute and Cook. I assumed to just add Stir speed.

    3- Flour/breadcrumb recommendations for those who haven't kitted out kitchens yet with more interesting items.
