Vegan Chilli Con Carne (for nachos)
- 1 carrot
- 1 onion
- 2 garlic cloves
- 1 Large chilli
- 40 grams olive oil
- 1 1/2 tsp cumin
- 2 tsp paprika
- 1 tsp Garlic powder
- 1/2 tsp chilli powder
- 1 tsp Onion powder
- 1/2 tsp chilli flakes
- 1/2 tsp Oregano
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 pinch cinnamon
- 1 pinch cloves
- 400 grams Nut meat, Vegie Delight can or fridge packet
- 1 tbsp veggie stock
- 50 grams tomato paste
- 1 can diced tomatoes
- 1 can Lentils or kidney beans, Drained

- 1. Chop carrot, 3 seconds speed 7.
2. Add onion, garlic, chilli and chop 5 seconds speed 5. Scrape down sides.
3. Add oil. Saute 5 mins 100 degrees speed 1.
4. Add cumin, paprika, garlic powder, chilli powder, onion powder, chilli flakes, oregano, salt, pepper, cinnamon and cloves and cook 1 min 100 degrees speed 1.
5. Add nut meat (if using tinned, chop speed 5 for 3 seconds), stock, tomato paste, tin tomatoes and lentils/beans. Cook 25 mins 100 degrees reverse speed soft "Gentle stir setting"
Serve with warm homemade tortillas or plain corn chips, a dollop of tofutti sour cream, avacado and a handful of grated bio cheese.
