Ingredients

Soup

  • 2 cloves garlic, peeled
  • 100 g onion, quartered
  • 300 g cauliflower, chopped into large chunks
  • 20 g olive oil
  • 250 g Spicy Italian Sausage, casings removed
  • 125 g smoked bacon, chopped
  • 1250 g chicken stock
  • 150 g heavy cream
  • 100 g Kale, chopped
  • salt, to taste
  • fresh ground pepper, to tasted
  • Parmesan cheese, grated

Recipe's preparation

    This is a low carb version clone of Zuppa Toscana served at Olive Garden Restaurants. Very addicting.
  1. Add onion, garlic, and cauliflower to Closed lid"Closed lid" .  Chop for 4 seconds/speed 7.  Scrape down bowl.  

     

    Add oil and saute for 3 minutes/100C/speed 1.

     

    Add sausage and bacon.  Cook for 5 minutes/Varoma/speed 2. Scrape down bowl.

     

    Add chicken stock.  Cook for 15 minutes/Varoma/speed 1.

     

    Add cream, kale, salt and pepper.  Cook for 5 minutes/90C/speed 1.

     

    Serve sprinkled with parmesan cheese and fresh ground pepper.

     

     

     

     

Tip

For extra kick, add crushed red pepper flakes in when you add the sausage.
