Ingredients
Mushrooms
- 15 g Dried Porcini Mushrooms
- 15 g Dried Oyster Mushrooms
- 15 g Dried Shitake Mushrooms
- 500 g water
Soup
- 1 onion, quartered
- 3 cloves garlic, peeled
- 1 stalk Celery, quartered
- 1 carrot, quartered
- 20 g oil
- 15 g Thyme, fresh or 1 tsp. dried
- 500 g Ground Beef
- 30 g tomato paste
- 30 g balsamic vinegar
- 1/2 tsp salt
- 1/4 tsp pepper
- 1000 g beef stock
- 1 bay leaf

Soak mushrooms in water to at least 30 minutes. Drain and reserve water.
Place onion, garlic, celery, carrot and thyme into "Closed lid" bowl. Chop for 4 seconds on speed 7. Scrape down the bowl with your spatula.
Add olive oil and saute for 4 minutes on Varoma temperature, speed 1.
Add ground beef. Cook for 10 minutes on Varoma temperature, "Counter-clockwise operation" "Gentle stir setting" , remove the MC and place the basket on top of the "Closed lid" lid.
Add mushrooms, tomato paste and balsamic vinegar. Saute for 1 minute on Varoma temperature, speed 1.
Add beef stock, reserved mushroom water, salt, pepper and bay leaf. Cook 10 minutes 100 degrees on "Counter-clockwise operation" "Gentle stir setting" with MC on.
Remove bay leaf and serve.
This is a very hearty soup with a nice balance of flavours.
Tip
You can add a can of rinsed black beans when you add the beef stock.
The balsamic vinegar really balances this soup nicely. I usually add a bit more to my bowl when I eat it.
