Ingredients
Huevos Rancheros
- 1 brown onion, quartered
- 2 clove garlic
- 15 g olive oil
- 225 g tomatoes, quartered
- 50 g tomato paste
- 1/2 tsp chilli powder
- 1/2 tsp ground cumin
- 1/2 tsp Ground Coriander
- 1/2 tsp dried oregano
- 1/2 tsp paprika
- 1/2 tsp Vegetable stock paste
- 250 g canned kidney beans, rinsed & drained
- 4 eggs
- 1/2 tsp balsamic vinegar

- 1. Place onion & garlic in mixing bowl & chop 3 sec/speed 7. Scrape down sides.
2. Add oil and saute 2.5 min/Varoma/speed 1.
3. Add tomatoes and chop 4 sec/speed 6.
4. Add tomato paste, herbs and spices, vinegar and stock paste and cook 4 min/100 deg/speed 1.
5. Add kidney beans and cook 2 min/100 deg/reverse speed 1.
6. Place frying pan over medium-high heat. Pour mixture into pan and cook for 2 mins or until bubbling. Reduce heat to a low simmer.
7. Make 4 wells in the sauce and crack an egg into each well, cover pan with lid and cook eggs for approx 5 mins.
