Ingredients

Simple Pasta & Vegetable Salad

  • 350 g pasta, (I used penne)
  • 60 g sun-dried tomatoes
  • 70 g Tasty cheese, cubed
  • 80 g creamy mayonnaise
  • 1 spring onions, quartered
  • 150 g red cabbage, roughly chopped
  • 1 carrot, roughly chopped
  • 1 stalk Celery, roughly chopped
  • 1/2 red capsicum, quartered
  • 70 g snow peas, ends & string removed

Recipe's preparation

    Simple Pasta & Vegetable Salad
  1. Add cheese to bowl and grate for 3 seconds on speed 8.

     

    2.  Add spring onion & sun-dried tomatoes to cheese and chop for 5 seconds on speed 7.  Scrape down the sides then add red cabbage, carrot and mayonnaise and chop for approximately 2-3 seconds on speed 4(as you would for coleslaw).  Scrape down sides to ensure everything is getting chopped evenly then add remaining vegetables and chop for approximately 3 seconds on speed 4.  Place vegetables in salad bowl then cook pasta according to instructions in EDC p. 16

     

    3.  Rinse pasta then add to salad ingredients in bowl and toss to combine. 

     

    Told you it was simple!

Tip

Add some sliced ham or shredded chicken to make it a complete salad meal.

    Great tasting salad!

    I followed recipe exactly, just needed to repeat last step to have veggies all chopped. I also added pasta to bowl as a final step for 1min, on reverse, stirring speed - with the aid of the spatula through the top of lid, it mixed everything together perfectly.

    Will become a regular for bbqs. Thanks for sharing tmrc_emoticons.)

    Quite nice, but I'd rather have the vegetables in much larger pieces than grated. The snow peas ended up quite stringy. Thanks for sharing.

    Great salad that the kids took for school lunch and loved it. I put in some cooked pancetta on top which went really well. Had enough for my lunch too. Yum.

    Really yum! I used macaroni and whole egg mayo. I had no snow peas or cabbage so doubled the celery and carrot. Even my 1 and 2 year olds loved it.

    I have made this a few times now and it is quite nice.  I prefer it without the snow peas and also used half cheddar/half parmesan cheese.  I also prefer it with Aioli rather than just plain mayonnaise tmrc_emoticons.)
