Ingredients

  • 100 g long rashers rindless bacon, (optional)
  • 300 g potatoes, (peeled and chopped roughly)
  • 125 g Tasty cheese, (chopped roughly)
  • 3 eggs
  • salt and pepper to taste

Recipe's preparation

  1. 1. Preheat oven to 180 degrees and grease a mini muffin pan. 2. Place garlic bacon and onion in TM bowl on speed 7 for 3 seconds.  3. Add potatoes and cheese, chop on speed 5 for 10 seconds.  4. Add eggs and salt and pepper to taste, mix Counter-clockwise operation"Counter-clockwise operation" speed 2 for 20 seconds (or until combined).  5. Spoon into mini muffin tins and bake for 20 – 25 minutes or until golden brown and tops and edges begin to get crispy.

Tip

Eat warm, or cool and freeze into individual packs and heat for about 20 seconds in the microwave. Breakfast is made for the whole week!

I used a silicone muffin tin for these ones and they came out fine, will most likely stick to metal muffin tins.  Also letting cool for 5-10 minutes in the muffin form helps with removal

    Yum. Simple and delicious. Made 12 muffins in silicone muffin cases. Made 4 vege - added sundried toms - and rest as per recipes. Added thyme and oregano and fried bacon onions and garlic first. 3 of us scoffed the lot in one sitting 👌

    Nice change for breakfast. I added in step 2.1 as per previous comments, added a little oil, 4min/ 120°/ spd 2.
    No way they'll last a week in my house.

    Delicious and easy to make. Sauteed onion, garlic and bacon as suggested by others. Will try adding herbs i.e. parsley or basil and replacing bacon with fetta next time.

    Delicious! Didn't add onion and sautéed bacon & garlic as other suggested. I didn't have any issues with them sticking. Used silicone tray for the large ones and normal non-stick for the mini. I'd already eaten 3 mini ones when I took the photo.

    I have made these a couple of times now, for funerals that my hospital auxiliary catered for. They were very popular. I am going to try sautéing the bacon etc next time, but I found them very tasty.

    Delicious, is on my favourite list from now on!

    The only changes: I substituted potato with sweet potato and used 5ml stock instead of salt.

    Made 12 muffin sized savoury muffins.

    TIP: As has been suggested, using silicone muffin cups or lining the holes with silicone paper may be a better idea for next time.

    Great thanks! Super easy to make and cook. I'll try adding a few extra ingredients next time like some grated zucchini and chopped mushrooms. But they are still delightful as per the recipe above. Thanks for sharing.

    These are a delicious easy brekkie. Thank you! I substituted half the potato with zucchini and used an extra egg and spinach. I also use patty pans in the muffin tray so they are easy to whip out and freeze/put away for quick brekkies.
