  • 2 clove garlic, peeled
  • 1 Small brown onion, peeled, halved
  • 1 Cup Mushrooms
  • 150 g bacon
  • 1 tablespoon olive oil
  • 8 eggs
  • 240 g Frozen spinach, defrosted on paper towel and liquid squeezed out
  • 500 g cottage cheese
  • 1 tsp salt
  • 1 tsp mixed Italian herbs

Recipe's preparation

  1. 1.  Preheat oven to 180 deg C.  Prepare your muffin tins (silicone is best as no sticking!) If you are using tin grease well.

     

    2.  Put onion and garlic in TMX bowl and chop for 3 seconds, speed 6.

     

    3.  Add mushrooms and bacon and chop on speed 5, 3 seconds. Scrape bowl down.

     

    5.  Add olive oil and saute for 5 minutes, 100 degrees, speed 1, REVERSE (MC OFF)

     

    6.  Add spinach, eggs, cottage cheese, salt and pepper and blend on reverse, speed 4 for 15 seconds.

     

    Pour mixture into prepared moulds. Bake uncovered in oven for 1 hour, or until eggs are set.

     

    Serves 20 - 76 Calories per serve.

    Since the recipe is under 'high protein' I was hoping the carbs, calories, and protein were calculated per serving 🤷🏻‍♀️

    I only had 6 eggs so I substituted the other 2 with chia eggs, and I used 1/2 tsp Herbamare instead of 1 tsp salt. I used 1x non-stick mini muffin tin & 1x non-stick muffin tin, well greased, and didn't have any problem with the muffins sticking. They smelled great while they were cooking and my 1 year old loved them! I froze everything that was left over and I'm sure it will defrost & reheat fine (good enough for a bub, anyway).

    Definately need to use silicone muffin pan (like recommended). I didn't have one and used a tin one, well greased, and they still all stuck and fell apart.

    Also, cooked for 1hr at 180 and they were burnt on the bottom. Maybe cook for 15 mins less of lower the temp.

    Family wasn't a fan of these.

    I added a little grated cheddar cheese too as I only had a small tub of cottage cheese
