Muffins
Tip
** I used sweet potato (cubed), brocolli and sweet corn in my muffins and they got the thumbs-up all round!
** You might like to add some feta cubes at step 5 to add a bit of an adult-factor and serve them as appetizers.

Can these be frozen?
If you haven't tried these, do yourself a favour, absolutely delicious. Thank you for posting the recipe.
We made these muffins for lunch today and we both really enjoyed them. I had tried something similar in a cafe and we preferred the ones we made. I only had one egg so substitued a chia "egg" for one of the eggas and I added a very small amount of thyme. Thank you very much for a delicious and healthy recipe.
Thi is one of my favourite recipes. I add fetta cheese and they taste amazing. Last time i made it in a loaf dish instead of muffin trays and had it as a slice which made it alot easier. I took them to a party last week and everyone was asking me for the recipe.
This is a great recipe. I always have it in the freezer for easy snacks.
I'm letting these cool as we speak.
I couldnt help myself and HAD to try one.. they're amazing!!!!!
