Soft Russian toffee
- 125 grams Butter
- 220 grams sugar
- 30 grams golden syrup
- 1 can condensed milk
- 200 grams Cadbury Milk Chocolate

Place cubed butter in TM bowl. 3mins, 50degrees, speed 1.
Add sugar & golden syrup. 5mins, 100degrees, speed 2.
Add condensed milk. 45mins, varoma, speed 3.
Pour into a baking paper lined slice tin.
Refrigerate for 30 mins, then score with a knife into squares. Return to fridge until cold & firm.
Once set, cut into pieces & place on a wire cooling rack with baking paper on the bench underneath.
Place broken up chocolate into TM bowl. Speed 9, 10secs. Scrape down sides of the bowl. 3mins, 50degrees, speed 3.
Pour melted chocolate over toffee squares. Return to the fridge to set.

Oh my! This is very delicious. I substituted date syrup for the golden syrup because that's what I had in the house. I used homemade condensed milk for the same reason. Even so, the caramels turned out smooth, rich and delicious.

OMG, this is sooo good - and I didnt even get to melt the chocolate of the top!! This is so easy to make and will make great little sweet treats for Christmas
